Cheese Souffle

Cheese Souffle
* 6 slices Low Carb Bread *
* 4 tablespoons softened butter
* 6 eggs
* 2 1/4 cups half and half
- 2 cups sharp cheddar cheese, shredded * 1 teaspoon Texas Pete Hot Sauce*
* Dash of nutmeg
* salt and pepper to taste

Lavishly butter bread and toast in broiler. Break into small pieces. Beat eggs, half and half, hot sauce, nutmeg and salt & pepper together. Grease a casserole dish with 1 tablespoon butter, and alternate layers of bread and cheese and pour egg mixture over the top. Refrigerate overnight. Bake at 350 degrees for 30-45 minutes.

During the last 15 minutes top with additional cheese but do not brown the top
