from the Atkins Kitchen Many variations of this typical Mexican salsa exist. To reduce the carbs further, either omit the tomato or the avocado.
1 medium avocado, chopped
1 medium tomato, chopped
3 green onions, chopped
1 jalepeno pepper, finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lemon juice
1 tablespoon canola oil or other vegetable oil
Salt and pepper
1. In a small bowl, combine all ingredients. Add salt and pepper to taste. Refrigerate 1 hour for flavors to blend.
Look for pebbly skinned Haas avocados: their flavor is richer and their texture creamier
