Pico de Gallo Relish from the Atkins Kitchen

Pico de Gallo Relish
Many variations of this typical Mexican salsa exist. To reduce the carbs further, either omit the tomato or the avocado.

1 medium avocado, chopped
1 medium tomato, chopped
3 green onions, chopped
1 jalepeno pepper, finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lemon juice
1 tablespoon canola oil or other vegetable oil
Salt and pepper

1. In a small bowl, combine all ingredients. Add salt and pepper to taste. Refrigerate 1 hour for flavors to blend.
Look for pebbly skinned Haas avocados: their flavor is richer and their texture creamier
