Tomato Soup, lowcarb, dairy-free, gluten free
For one serving: Combine 3/4 cup tomato juice, 1/4 cup water, one teaspoon not/Starch, one teaspoon sugar equivalent (I use a saccharin tablet), one bouillon cube, and a pinch of cayenne (optional). Heat.
This also scales up beautifully.
Chinese Egg Flower Soup
For four servings:
Combine five cups of chicken broth with one teaspoon of not/Starch. Add one teaspoon of sherry if you like. Bring to a boil.
Beat one or two eggs.
Remove soup from heat. Gently stir in egg so that it forms "flowers." Sprinkle chopped scallion on top. Serve immediately.
