1 cup shredded 4-cheese blend (or cheddar if you prefer)
1 cup salsa, mild to hot - your choice!
Marinade 4 large chicken breast filets in tequila for at least 3 hours.
Sprinkle chicken w/ garlic salt and black pepper. Add butter to a saute pan, and saute chicken and the garlic, turning several times. When the chicken is almost done, squeeze the juice from 1 lime onto the chicken. Continue cooking until done.
Place a large spoonful of salsa on each of 4 serving plates. Place one chicken breast on top of sauce on each plate. Now divide the salsa evenly to top each breast. Sprinkle with cheese and either microwave or place under a broiler (must use over safe plates!) until cheese is melted.
Carb Count: WITHOUT salsa, carbs will be about 2 per serving. Check the carb count on your salsa, as brands vary greatly, and add that to obtain the final carb count.
