"I've been living the low carb lifestyle for a year now. I started out thinking I was going on a "diet", with the goal of losing only a few pounds for an office weight loss contest, and I figured once I lost those few pounds I would quit and go back to my regular food fare! Within literally days however, I realized my stomach didn't hurt like it usually did. I had blamed my constant upset stomach on stress, carbonated beverages, medications and hormones, and the only advice I was ever able to get from a doctor was to try eliminating milk products from my diet. I continued on the low carb diet just to see if indeed it was responsible for my feeling great! Over time this has proven to be true, I continue to feel like a normal person again! As a "side effect" I lost 15 pounds and look great too. Low carb is much more than a diet, it is indeed a lifestyle!
When I first began the low carb lifestyle I was naive as to the varied foods I could include in my diet. I got tired of meat, cheese and eggs really quickly! But over time I have read various cook books, scruntinized hundreds of labels, kept a carb counter at my dining room table and my desk, and conducted many "experiments" in my own kitchen (some more successful than others). I even have a few dishes that my kids request or say they can't tell the difference between the low carb and carb laden version.
It's still hard sometimes, especially when co-workers bring in cake and other goodies into the office and just about everyone I know is misinformed about the health benefits of a low carb lifestyle--and they don't hesitate to give me their opinion! I point out that all we "know" about nutrition we got from our parents and at school 30 and 40 years ago! Look at the NEW findings about low carb diets!
